Join celebrated patisserie chef, Charlotte Marrifield, on this full day "hands on" course learning some of the essential techniques of the art of patisserie to create 3 stunning patisserie desserts.
If there is such a thing as a 'superstar' of pastisserie then Charlotte is one. The owner of boutique patisserie Sugar Therapy and now her own commercial patisserie business producing stunning modern patisserie under her brand "Undeniably Charlotte" which is available in Booths supermarkets along with exclusive outlets in Harrogate. Charlotte is incredibly passionate about patisserie and is always at the cutting edge of new trends and with 23 great taste awards to her name she is incredibly sought after as a development chef for the likes of Gu, Marks and Spencer, Waitrose and Lily O'Briens.
On the day you will create:
Apple Nougatine Tart – a classic French dessert with a pastry base and caramelized apple filling, topped with crisp flaked almond nougatine. This will be made as a full size "show stopping" patisserie tart.
Mini Key Lime and Ginger Pies – Individual ginger biscuit bases, filled with zesty lime custard, topped with whipped cream and lime Gel.
Individual Champagne and Raspberry Trifles - champagne jelly studded with raspberries, topped with Tahitian vanilla cream. Charlotte will also show you a number of decorations with a modern twist for your mini trifles.
You will make every element alongside Charlotte, learning key patisserie skills along the way and at the end of the day you will have 3 very different desserts to take home amd share with family and friends.
Charlotte will also demo some "bang on trend" savoury muffins which are simple to make and which you will be able to taste over lunch.....perhaps caramelized red onion and mature cheddar or maybe goats cheese and pesto. She will give you the recipe for her savoury muffins together with lots of suggestions for other fillings to try at home.
If time allows Charlotte will also demo a selection of decorations to transform your patisserie work.
