This Fish Masterclass is the 3rd with talented Yorkshire chef, Stephanie Moon.

This is a fabulous fish cookery course for people who love to eat fish but are a little daunted by how to prepare and cook fish.

During this full day "hands on" fish masterclass you will learn the knife skills needed to fillet fish as well as a number of other fish cookery skills such as how to pin bone fish, prepare your fish for baking, cook en papillotte and produce a perfect chive sauce.

This fish masterclass is led by Steph, who has gained a reputation for her innovative and modern approach to all aspects of fish cookery. Steph started her career at The Dorchester on Park Lane in London working for Anton Mosimann, and her TV appearances have included “The Great British Menu" and "Put Your Money Where You Menu Is".

Steph is very passionate about promoting the use of British fish and also enjoys using local produce in her cooking.

Following her series of "sell out" fish cookery courses with us Steph has come up with all NEW recipes for this new Fish Masterclass.

This Fish Masterclass will give you the confidence needed to make the most of the fish we have in the waters around the UK and Steph will pass on lots of excellent tips of preparing and cooking fish during the day.
Working alongside Steph you will create a series of fabulous dishes to take home and share with family and friends.

Fish cookery masterclass menu

On this fish cookery course you will make:    

  • Trout Coulibiac - baked trout in a puff pastry parcel with a summer verbena rice stuffing served with a light chive sauce
  • Smoked paprika and lemon thyme roasted monkfish with artichoke puree and tomato bon bons

  • Grey Mullet with fresh herbs and lemon en papillotte accompanied by a julienne of vegetables

Steph will also demo and cook the following for lunch:

  • Fresh herb crusted lobster and mini sole goujons served with lime chilli coriander

Steph will do a number of other fish cookery demos during the day including a lobster and monkfish masterclass and tell you how to make the perfect fish stock.

This course includes refreshments throughout the day and  lunch which Steph will cook for you.
