This full day foraging course will give you a fascinating insight into the best foraged wildfoods of the season. You will spend a day in the Peak District around Bakewell foraging with renown expert forager Jim Parums from Forage Box learning to find and identify edible plants, seeds, nuts, flowers and fungi that grow wild in the British countryside. Depending on the season we may be tapping trees for sap, gathering wild herbs or picking edible fungi, but no matter what we find you will learn how to prepare and transform foraged foods into great dishes. 

The day starts with a foraging walk from Bakewell out into the surrounding countryside, where James will guide you through the identification and harvesting of wild ingredients. This walk will last for about 3-4 hours and we will be stopping for a packed ploughmans lunch of locally sourced artisan produce. On your return to the cookery school James will demonstrate how to turn your foraged ingredients into simple and exciting dishes.  You will then get to taste the foraged food dishes in our 'pop up' wild food restaurant. 

The SAMPLE MENU* from the a previous foraging course in the Spring was:

  • Wild herb Dukkah.
  • Wild pesto and pasta.
  • Trout, nettle puree, pickled wild veg.
  • Pine Creams.

This course includes refreshments and an informal packed light lunch.
