This full day "hands on" seasonal cookery course will give you an opportunity to cook alongside one of the Peak District's most accomplished and inventive chefs. Darren Goodwin, who has a passion for local produce and fresh ingredients, bulit up hIs reputation cooking a daily Peak District seasonal menu at the 2AA Rossette boutique restaurant Losehill House.

On this Flavours of Chatsworth Cookery Course you will work alongside award winning Head Chef Darren, to produce a stunning 3 course tasting menu made from the finest sourced ingredients, many of which are from Derbyshire and the Chatsworth Estate. Along the way you will learn how to build up each of the plates of food using a range of cooking techniques to create a stunning plate of professionally presented food. You will then be able to take home everything you make on the day to enjoy with family and friends.

This Chatsworth inspired menu includes: 

    •    Seabass with summer cucumber and dill salsa, crispy capers and cauliflower puree

    •    Guinea fowl two ways.......

    •    Kiev of guinea fowl breast with wild garlic butter, Chatsworth cure smoked bacon, fondant potato and guinea fowl sauce

    •    Slow roast leg of guinea fowl with fresh salad of watercress, seasonal kohlrabi remoulade (with creme fraiche, mustard and chives), broad beans and oven dried tomatoes

    •    Fabulous caramelised honey cream with honey jelly, poached apricot and home made pistachio biscuit

A whole host of cookery techniques are covered on this seasonal cookery course including:

    •    Basic game butchery skills

    •    How to roast your game carcass to make a game jus

    •    How to prep kohlrabi and make remoulade

    •    Making your own oven dried tomatoes

    •    How to caramelise honey to create a fabulous dessert

    •    Making jellies

    •    How to poach stone fruits

    •    Biscuit making

This course includes refreshments and a light lunch prepared by Darren.
