This full day "hands on" course with expert forager and accomplished chef Chris Bax from Taste the Wild will teach you how you can create some fantastic foraged beverages and drinks using wild foraged ingredients.  You will begin the day with a short forage along the nearby Monsal trail before returning to the School of Food to create your own mayflower or elderflower Champagne. Working alongside Chris you will learn how to infuse vodka with elderflower and fruits to create your own elderflower and fruit vodka.

In the afternoon you will go on to produce your own nettle cordial and Chris will also tell you how you can turn this into delicious nettle beer. You will make your own wild spiced mulled wine along with a wild mint and cumin cooler. Chris will also teach you how to produce your own wild infusions. The day ends with you making a classic 'Dandelion and Burdock' cordial but this time using the real wild wood foraged ingredients.

This is a fascinating course for anyone interested in creating their own bespoke drinks using wild ingredients we can find all around us. 

Course times: 10 a.m. - 4 p.m. 

This course includes refreshments throughout the day and a locally sourced artisan ploughman's lunch.
