This two day "hands on" bread-making course is aimed at novice bread makers as well as people who want to improve and broaden their bread making skills under the guidance of two expert bread making tutors.

Day 1 - Saturday

On the first day Dave Foster will guide you through the following essential bread making processes on his Introduction To Artisan Bread Making:

Mixing, kneading, proving, shaping and baking.

You will then go on to create:

  • An artisan loaf proved in a Brotform with ridges and baked off with a lightly floured finish
  • Shaped and customised dinner rolls
  • Classic Yorkshire Tea Cakes, giving you early experience of working with an enriched dough

Day 2 - Sunday

On the second day join Andrew Auld from artisan bakery the Loaf to build on your first days introductory experience.  Andrew will take you through baking 3 very different speciality breads and the associated bread making techniques:

  • A rye bread made with Andrew's own sourdough starter culture.  Learn the techniques of soughdough kneading and how to work with rye flour.
  • Learn how to make your own focaccia and how to work with this wet dough to create a stunning authentic Italian bread.
  • Make the perfect croissants by learning the essential viennoiserie skills of lamination by working with an enriched dough.

This two day weekend bread making course is aimed at enthusiastic bread makers who wish to learn a variety of bread making techniques to equip them to make a variety of stunning breads to enjoy with friends and family at home.

Course Times:

Day 1 - Sat 11am - 3pm

Day 2 - Sun 9.30 - 4.30pm

This course includes refreshments and an informal light lunch.
